Pesto Breadcrumbs

For an exciting twist on a traditional fish dinner, try our Pesto Breadcrumbs using any leftover sandwich breads you may have in the kitchen.

2 slices of Kara Malted Bloomer
2 tbsp green pesto
100g grated parmesan
Bunch of basil
4 white fish fillets
Olive oil
1 lemon


  • Take two slices of bread (we recommend our Kara Malted Bloomer) and chop them into small pieces.
  • Place in a mixing bowl and add the chopped basil, green pesto and grated parmesan. Drizzle with olive oil and give everything a good mix. This is your pesto breadcrumb mix.
  • Line a baking tray with some olive oil and carefully lay the fish flat, topping each fillet with the pesto breadcrumb mix. Place the tray in the oven and bake at 200°C for 10-15 minutes, or until golden.
