Gluten Free Butternut Squash Bun
Time to discover that the Genius gluten free brioche burger buns are not just for burgers! Pile them with crisp apple, bangin’ butternut squash, chickpeas and an assortment of spices to assemble a delightfully healthy meal, packed full of fibre to leave you and your gut feeling on top of the world this lunch time.
4 Genius Brioche Rolls
For the butternut Balls:
150g tinned chickpeas (drained weight)
150g butternut squash (peeled, deseeded, and roasted until soft)
1 red pepper (roasted, skinned, de-seeded)
1 tsp tomato puree
50g onion, finely chopped
2 tsp lemon juice
1 garlic clove, crushed
½ tsp ground coriander
¼ tsp ground cumin
¼ tsp paprika
¼ tsp salt
¼ tsp chilli flakes
1 tbsp flour
1 tbsp cornflour
1 tbsp psyllium husk
For the base of the brioche:
Baby spinach leaves
Blend the high fibre butternut ball ingredients together and leave for an hour or so to stiffen (good things that come to those who wait). If you find them too sticky to handle then add a little more flour.
Roll into small balls (this mix makes about 20 minutes) and fry in sunflower oil until a deep golden brown (be careful of your fingers)
Remove from the oil and lay on kitchen paper.
Serve up in the gluten-free brioche roll with a salad of baby spinach leaves, grated apple, dried cranberries and sultanas. The more the merrier with plant-based foods… your gut loves them!
