New York Eggs Benedict
This is a delicious breakfast treat all the way from the Big Apple! Serve with orange juice and a steaming mug of coffee. Also great as a tasty starter too!
Serves 2
Ingredients
2 x Kara English Muffins
8 rashers of streaky bacon
4 x large eggs
Hollandaise sauce (can be home made or shop bought)
Method
1. Grill the bacon until crispy.
2. Poach the eggs for 2-3 mins (so yolks are still runny)
3. Meanwhile gently warm the Hollandaise sauce.
4. Cut the Kara English Muffins in half and toast
5. Place two rashers of bacon on each muffin half. Top with a poached egg and a spoonful or two of warmed Hollandaise sauce
6. Season to taste with salt and coarse gound pepper and serve!
