Classic Club Sandwich
As with many such recipes, the exact origin of the Club Sandwich is subject to a little speculation however the most popular theory suggests it was first served around 1894 at the The Saratoga Club House, a private gentlemen only gambling club in New York.
It remains a popular choice to this day. Here's our version!
Ingredients
(serves 2)
4 rashers streaky bacon
1 large chicken breast
6 slices Kara Wholemeal Medium Bread
3 tbsp mayonnaise
1 tsp coarse ground French mustard
Iceberg lettuce, washed and sliced
2 tomatoes - thinly sliced
Method
1. Warm a large non-stick frying pan. Add the bacon to the dry pan and fry for 1 - 2 minutes on each side until starting to crisp. Roughly chop into smaller pieces and then set aside in a warm place on a plate lined with kitchen roll.
2. Lay the chicken breast out flat on a chopping board. Using a sharp knife cut the breast horizontally into 4 thin slices. Season (with salt and pepper), then add to the hot pan. Fry for 2 - 3 minutes on each side until golden and the juices run clear. Place on kitchen roll and place with the bacon.
3. Toast the bread (in a toaster or grill) until golden. Mix the mayonnaise and mustard together in a small dish.
4. Spread two slices of toast with the mayo mix, and top each with a slice of chicken and a quarter of the bacon, lettuce leaves and tomato slices.
5. Top each slice with another slice of toast and again spread with the mayo mix and top with chicken, lettuce, tomato and bacon. Spread the last two slices of toast with the mayo mix and place, mayo slice down on each sandwich.
6. Press the sandwiches down firmly and using a serrated bread knife, cut each sandwich into triangle quarters. Skewer each quarter with a cocktail stick.
7. Serve with crisps or fries
